Ingredients
Method
- Heat the oven to 425°F (220°C). Arrange the cabbage wedges and potatoes in a large roasting pan or 9×13-inch baking dish and scatter the sausage and corn around them.
- Stir the melted butter, Cajun seasoning and garlic together and spoon it over everything, working some between the cabbage leaves. Pour the chicken broth into the pan.
- Cover tightly with foil and bake 35 minutes, until the potatoes are nearly tender. Uncover, baste with the buttery juices and bake 15–20 minutes more, until the cabbage is browned at the edges, the potatoes are completely tender and the sausage is sizzling (165°F / 74°C).
- Squeeze over the lemon juice and scatter with the parsley. Taste before adding any salt. Cajun blends are salty. Serve with the pan juices spooned over.
