Ingredients
Method
- Heat the oven to 400°F (200°C). Cook the pasta in a large pot of well-salted water for 2 minutes less than the package says. It finishes in the oven. Drain and return it to the pot.
- Meanwhile, stir the cottage cheese, ½ cup of the parmesan, the garlic powder, oregano and ¼ tsp pepper together. For a smoother, ricotta-like texture, mash it with a fork for a minute or blitz with an immersion blender.
- Stir 3 cups of the marinara sauce and the spinach into the hot pasta (the heat wilts it), then fold in the cottage cheese mixture and 1 cup of the mozzarella.
- Spread in a 9×13-inch baking dish, spoon over the remaining marinara and scatter with the rest of the mozzarella and parmesan. Bake 20–25 minutes, until bubbling and the cheese is melted and golden in spots.
- Rest 5 minutes, then tear the basil over the top.
