Garlic Butter Steak Bites with Green Beans

In the Tablewise app, this recipe scales to your household, swaps for allergies and diets, and goes straight onto your shopping list.

Ingredients

Method

  1. Heat 1 tsp of the oil in a 12-inch cast-iron or heavy skillet over medium-high heat. Add the green beans, ¼ cup water and a pinch of salt, cover and cook 4 minutes. Uncover and cook 1–2 minutes more, until the water has evaporated and the beans are crisp-tender. Tip onto a platter.
  2. Pat the steak cubes very dry and season with 1 tsp salt and ½ tsp pepper. Wipe out the pan, add the remaining 2 tsp oil and heat until it just begins to smoke.
  3. Add half the steak in a single layer and sear without moving it for 2 minutes, until deeply browned underneath. Turn and cook 1–2 minutes more for medium-rare (130°F / 54°C), or until 145°F (63°C), the USDA’s recommended minimum. Move to the platter and repeat with the rest.
  4. Lower the heat to medium, add the butter and garlic and stir for 30–60 seconds, until the butter foams and the garlic smells sweet but hasn’t browned. Return the steak and its juices, toss to coat, then spoon everything over the green beans and scatter with the parsley.
