Ingredients
Method
- Heat the oven to 400°F (200°C) and line a rimmed baking sheet with parchment.
- In a large bowl, stir the panko with 3 tbsp water and let it soak 2 minutes. Add the egg, parmesan, garlic, oregano, ¾ tsp salt and ¼ tsp pepper and mix well, then add the beef and mix gently with your hands until just combined. Roll into 16 meatballs.
- Bake 15–18 minutes, until browned and 160°F (71°C) in the center.
- Meanwhile, warm the marinara sauce in a large saucepan over medium-low heat. Add the baked meatballs and simmer gently for 5 minutes so they soak up some sauce.
- Open the rolls on the baking sheet (swap in fresh parchment if it’s greasy) and toast them in the oven for 3 minutes. Pull out a little of the soft bread from each to make room, then fill each roll with 4 meatballs and a spoonful of sauce. Top with the mozzarella.
- Bake 5–6 minutes more, until the cheese is melted and bubbling. Serve with any extra sauce for dipping.
