Shepherd’s Pie

In the Tablewise app, this recipe scales to your household, swaps for allergies and diets, and goes straight onto your shopping list.

Ingredients

Method

  1. Put the potatoes in a large pot, cover with cold water by 1 inch and add 1 tbsp salt. Bring to a boil, then simmer until a knife slides in with no resistance, 15–18 minutes.
  2. Meanwhile, heat the oven to 400°F (200°C). Heat a large skillet over medium-high heat, add the lamb and cook, breaking it into small crumbles, until browned with no pink left (160°F / 71°C), 7–8 minutes. Lamb gives off a lot of fat, so spoon off all but about 1 tbsp.
  3. Add the onion and carrots with a pinch of salt and cook, stirring, until softened, 5–6 minutes. Stir in the garlic, tomato paste, thyme and rosemary for 1 minute, then sprinkle over the flour and stir for 1 minute more.
  4. Slowly stir in the beef broth and Worcestershire sauce, scraping the bottom of the pan, and simmer 5–8 minutes, stirring now and then, until you have a thick, glossy gravy. Stir in the peas, season with salt and pepper and spread it in an 8-inch square baking dish or a similar-size casserole.
  5. Drain the potatoes and return them to the warm pot for 1 minute to steam off excess water, then mash with the butter, milk, ½ tsp salt and a few grinds of pepper until smooth.
  6. Spoon the mash over the filling, starting at the edges so it seals in the gravy, then spread it out and rough up the top with a fork. Set the dish on a baking sheet and bake 25–30 minutes, until bubbling at the edges and golden on the ridges. Rest 5–10 minutes before serving.
