Ingredients
Method
- Heat the oven to 450°F (230°C). Cut the potatoes into ½-inch fries, toss with the oil and ¾ tsp salt, and spread on a baking sheet. Bake 30–35 minutes, flipping halfway, until crisp.
- Divide the beef into 8 loose balls. Heat a large cast-iron or heavy skillet over high heat.
- Add the balls 2–4 at a time and press them firmly flat with a sturdy spatula. Season with salt and pepper and cook 2 minutes until deeply browned.
- Flip, top half of the patties with cheese, cook 1 minute more, then stack a plain patty on each cheesy one.
- Toast the buns cut-side down in the pan, then build the burgers with lettuce and tomato. Serve with the fries.
